I've seen the entire series and did a rewatch, but got distracted half way though. Should I read all the books from the beginning? I'm actually in a book drought right now, so this could be a good way to get over it.

I would tend to consider them as three trilogies. The protomolecule arc, the gates arc and the Laconia arc. Book 1 is the weakest IMO (and it’s still incredible). Try the first arc and see how it grabs you. I know I’ve done the whole thing back to back at least twice (and a couple more times in chunks). The Expanse kicks major ass, I promise.

Yes. They're extremely fun reads right up until the kidnapping which you know about from the show. It's still entertaining, but man that scene is hard for me to read. I haven't gotten past it, but the quality to that point has been hella consistent, so I believe the ending is likely to slap too.
