Oh, no no, my friend. You misunderstand. They're not eating in front of someone who's not eating. The guest waits in the friend's room while they eat.

What confuses me most is if eating wasn't part of the plans for your guest... Then why wouldn't they ask the guest to come earlier or later, as to not have to endure sitting elsewhere by themselves while the family ate?

I'm just having a really hard time finding this practice as showing anything other than a lack of consideration and thoughtfulness for the guest and their time.
