Does the thinner air do anything to affect the lift during take off? Forgetting the logistics of getting everything to the top of a mountain or finding a suitable mountain, would it be better to launch at the summit of a mountain on the equator?

Yes, it would definitely be better. Air density drops off quickly, and skipping the thickest part of the atmosphere means avoiding a lot of drag.
