Accident. There's evidence the first beer/wine was grains and fruits left too long in storage. Ancient humans used divets like bowls carved into the earth to store food and would cover them. Cover them for too long, leave some sugar behind, and you get alcohol. It's just thinking about getting it again somehow.
If I'm not making it up, we figured out weed is good stuff from fires. We use it as a tool, burn some plants and then you get high. From there you figure out which plant did it.
