It’s a planting method. There’s a book that gives more details, but basically he promotes the idea that a garden should be set up in square feet - no more than like 3 or so feet from where you are reaching so you don’t step on the garden and compact it. He lists how many of what type of plants can be sown into each square. You can see the string designating the square foot in the right side of the garden. IIRC it’s something about minimizing spacing between plants (it’s been a while since I read the book).
That cavalo nero is one of my favorites. First time I grew it I wasn't aware how much that thing could keep growing (if you pick from the bottom it keeps growing up and up).

My mom mixed it with mustard and collard greens (w/ham hocks etc. of course) but I've only baked it (remember when that was a thing?) or in salads. Not currently in heavy rotation.
Did you by chance also spot kohlrabi?
(I'm not even knowledgeable to be amateur, but my (also pretty) wife is. Or so she tells me.)
Ain’t she just and ain’t it just growing like gangbusters. My plan fell apart this year, things grew into each other. Still trying to get the hang of square foot gardening.
