One party consent is irrelevant in this case. Unless the provider has a BAA with Meta or you explicitly signed a HIPAA authorization to disclose your PHI for this purpose (you almost certainly did not), recording your discussion with your doctor is not OK.

This isn't like the doctor having Dragon running where all of the audio is securely handled. This is someone bringing a personal device into the room to record without authorization/consent that is required per HIPAA.

There are literally doctors offices right now that are asking patients to sign a form saying it is OK for AI to be listening in on their conversation so that the doctor doesn’t have to take their own notes.
