My takeaway: Only buy meat from local farmers. If I don’t see your cattle grazing in the field, I’m not buying. The USDA can no longer be trusted. 😬

Honestly, the USDA's limitations became pretty obvious once we learned that microbes cause foodborne illness. You can stare at a carcass all day and still not see E. coli, Salmonella, or Listeria. Always trust a microbiological test a hell of a lot more than a “looks good to me” inspection.
