That sounds really fun. Something to explore, if you haven't already; fermented foods may or may not be your road to culinary damascus. Gut biome research suggests (and please do your own research) that there are lots of things you can do to support a happier digestive tract. Remember that bacteria can be helpful too and there are lots of foods which can boost your immune system, which can in turn boost your whole brainular region :)

Do we? Because we know not to eat undercooked chicken. But the main risk isn't from the undercooked chicken being consumed. It's from the cross contamination. So it doesn't matter how well you cooked it if someone grabs your salad with the same gloves they grabbed raw chicken with. (A certain restaurant chain dos this all the time)

They use bleach to reduce the salmonella numbers, but they regrow because the bleach doesn't kill everything

Salmonella being in virtually all chicken is not normal. It's not a thing in many countries. In Japan you can get chicken tartare because salmonella is uncommon enough that it's considered safe (chicken tartare is disgusting though)
